Fresh and jovial, it combines creaminess and agility in a well-balanced sip, slightly tense on the finish. Paired with beet crêpes and sea bass. Straw yellow with fine, elegant perlage, it opens shyly then exudes sweet notes of apple, pear and melon intertwined with mapo and mandarin-orange. Acacia, chamomile and calendula mingle with mineral nuances of chalk and flint followed by tempting hints of apricot tart and buttery brioche. Spicy touches of white pepper, juniper and myrtle add verve. The sip is creamy and fresh, harmonious with medium structure; the slightly dry, citrus finish, maintains tension and a pleasant saline freshness.
